It’s always good to mix starters up at christmas, things can become a bit repetitive so this creamy mushroom soup is a beautiful, peppery, tasty starter to kick off your festive meal.
This soup is so simple to do, and if your lucky enough to own a soup maker like me, it is even easier!
The soup is completely syn free.
1 White Onion
1 Clove Garlic
- Dice the onion, and roughly chop the mushrooms. Fry the onion and garlic in a saucepan using low calorie spray until softened.
- Add the mushrooms to the onions and fry off until starting to soften. Add a couple of sprigs of thyme and add vegetable stock.
- Bring the soup to a boil, and then simmer for 10 minutes. Take the pan off the heat and blend until smooth.
- Add as much quark as you require to make it as creamy as you would like. Season with salt and fresh cracked pepper.
- Serve and enjoy!
