Creamy Mushroom Soup

It’s always good to mix starters up at christmas, things can become a bit repetitive so this creamy mushroom soup is a beautiful, peppery, tasty starter to kick off your festive meal.

This soup is so simple to do, and if your lucky enough to own a soup maker like me, it is even easier!

The soup is completely syn free.

Ingredients

400g Mushrooms
1 White Onion
1 Clove Garlic
Vegetable Stock
Thyme
Quark

Method

  1. Dice the onion, and roughly chop the mushrooms. Fry the onion and garlic in a saucepan using low calorie spray until softened.
  2. Add the mushrooms to the onions and fry off until starting to soften. Add a couple of sprigs of thyme and add vegetable stock.
  3. Bring the soup to a boil, and then simmer for 10 minutes. Take the pan off the heat and blend until smooth.
  4. Add as much quark as you require to make it as creamy as you would like. Season with salt and fresh cracked pepper.
  5. Serve and enjoy!
