Clean Eating Carrot Cake

Following on from my clean eating week I have had a couple of requests for my carrot cake recipe. So here it is, and also for anyone following Slimming World I have left the syn values at the end!

Ingredients

Makes 12

210g Wholemeal Flour
1 ½ tsp Baking Powder
½ tsp Bicarbonate Soda
2 tsp Mixed Spice
1 tbsp Coconut Oil, melted
1 Large Egg
2 tsp Vanilla Extract
7 tbsp Maple Syrup
3 tbsp Greek yogurt (full fat or fat free)
60ml Milk  (I used semi-skimmed)
2 Grated carrots
25g Raisins

Topping

Greek Yogurt
Dessicated Coconut (Optional)

Method

Pre heat oven to 180C
Line a baking tin with greaseproof paper

Put everything in a mixing bowl AND mix.

Pour into the lined baking tin (the mix may be more thick than runny thats okay)

Bake for about 20 minutes or until a skewer comes out clean or the cake springs back when pressed! (whichever method your mother taught you!)

Let the cake chill, spread with the greek yogurt, sprinkle with the desiccated coconut if using and its DONE. Ready to eat. YUM

This cake I class as clean eating as all the ingredients are from natural sources – however remember to eat in moderation!

The syn value cut into 12 is 5 syns per piece, which is not bad when you think it is a homemade healthy cake!
