Slimming World – Curry Night

Tonight in our house we had a syn free curry feast!

*Disclaimer* Now i’m not claiming to be a fantastic curry chef, I rarley have curry and also this is a Slimming World adapted recipe so won’t be ‘Indian Authentic’, but it does the job for me and my family and hopefully you will enjoy it too!

I cooked tikka marinaded chicken and made a simple spiced tomato based sauce. Served it with boiled rice, fresh onion salad, mint yogurt dip and poppadoms!

Grilled Chicken Tikka Pieces

To make the grilled chicken, chop up 3 chicken breasts pop them into a bowl along with a heaped tbsp tikka spice mix and a tbsp curry powder. Squeeze half a lime, add a few spoons of fat free yogurt and mix it all together and leave it for about an hour. (You can leave it much longer than and hour, even over night if you are super organised!)

Once it has been marinating place it onto a tray, spray with frylight and put under the grill, turning once half way through cooking until fully cooked.

Chicken Curry

To make the sauce – Chop one onion and fry in in a pan until soft, add another tbsp of tikka spice mix, 1 tbsp curry powder, 2 tbsp tomato puree and fry it for about 5 minutes on low to cook out the raw spices. To that add 300ml chicken stock, 1/2 tin chopped tomatoes and about 150ml passata.
Add 2 diced peppers for extra speed if you fancy, or any other vegetable you like.

Then leave it to simmer while you make the onion salad and yogurt dip.
Stir the sauce occasionally, and add more passata if it starts to dry out.
(I like a lot of liquid in my curry so I make sure there is enough sauce)

Once you are ready to serve the curry, you can either make it creamy with milk (if using your healthy extra A) or you can use fat free yogurt. I used milk as I can always pick out the taste of yogurt too much.

Onion salad & Mint Yogurt Dip

 

To make the Onion Salad– Finely slice half a white onion, take a piece of cucumber (about 5cm) cut in half, then in half again then cut of the middle bit of the cucumber and discard, finely slice the cucumber and add to the onion. To the cucumber and onion add some chiffonade of mint (or jar mint sauce if you don’t have fresh mint), a few dashes of cider vinegar, salt & pepper and thats your onion salad done!

To make the Mint yogurt dip– Put fat free yogurt in a dish- stir in mint sauce. Done.

 

Putting it all together…

Once you have made all your components all you have to do then is put it all together!
